Instructions:
- Start by preparing the fruit. If using berries, wash and hull them. If using stone fruit, pit and chop them. If using tropical fruit, peel and chop them.
- Add the sugar, lemon juice, and vanilla extract to the fruit and stir until well combined.
- In a small bowl, whisk together the cornstarch and 1/4 cup of water until smooth. add this mixture to the fruit mixture and stir until well combined.
- Set up a boiling water bath and place 4-6 half pint jars in it (see notes). You can also use a larger pot with a wire rack placed inside it – just make sure that the jars don't touch the bottom of the pot.
- Pour the fruit mixture into the jars, leaving 1/2 inch of headspace at the top of each jar. Use a chopstick or other sharp object to poke down into the mixture and remove any air bubbles that may be trapped in there (see notes).
- Wipe down the rims of the jars with a damp paper towel and then apply lids and rings (see notes). 7 . Place the jars in the boiling water bath and process for 10 minutes (see notes). 8 . Remove the jars from the boiling water bath and let them cool on a kitchen towel on the countertop . Once they are cooled , check to see if they have sealed properly – there should be no flex or movement in the lid when pressed down . If one or more of them haven't sealed properly , store them in the refrigerator and eat within 2 weeks .
