  2. Add the sugar, lemon juice, and vanilla extract to the fruit and stir until well combined.
  3. In a small bowl, whisk together the cornstarch and 1/4 cup of water until smooth. add this mixture to the fruit mixture and stir until well combined.
  4. Set up a boiling water bath and place 4-6 half pint jars in it (see notes). You can also use a larger pot with a wire rack placed inside it – just make sure that the jars don't touch the bottom of the pot.
  5. Pour the fruit mixture into the jars, leaving 1/2 inch of headspace at the top of each jar. Use a chopstick or other sharp object to poke down into the mixture and remove any air bubbles that may be trapped in there (see notes).
  6. Wipe down the rims of the jars with a damp paper towel and then apply lids and rings (see notes). 7 . Place the jars in the boiling water bath and process for 10 minutes (see notes). 8 . Remove the jars from the boiling water bath and let them cool on a kitchen towel on the countertop . Once they are cooled , check to see if they have sealed properly – there should be no flex or movement in the lid when pressed down . If one or more of them haven't sealed properly , store them in the refrigerator and eat within 2 weeks .
