1 cup of flour

1/4 tsp salt

2 tsp baking powder

1/4 cup butter, softened

1 egg Grated rind of 1 lemon (optional) 1/2 – 2/3 cups of jam of your choice. We suggest a fruity flavour like raspberry, strawberry or apricot.

Preheat your oven to 200C (400F) and line a baking sheet with parchment paper. In a bowl, combine the flour, salt, baking powder and lemon rind (if using), then set aside. In a larger bowl, cream together the butter and sugar until light and fluffy. Add the egg and mix well. Gradually add in the dry ingredients and mix until everything is just combined. Take 1 heaped teaspoon of dough and roll into a ball. Flatten slightly and place on the prepared baking sheet. Repeat until all the dough has been used up. Make a small indentation in the centre of each cookie and fill with a spoonful of jam. Bake for 12-15 minutes or until golden brown and firms up when touched lightly. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
